Armenian Black Wheat is also referred to as Persian Wheat. The color refers to the awns and hulls, not the grain. Armenian Black is regarded for its disease resistance. It is related to Khorasan (Kamut), but is not suitable for leavened breads; it is excellent is cakes, cookies, soups, and as a grain pilaf.
