Week 6- Amaranth
I have not tasted amaranth but it’s taste is described as sweet and nutty and it has a crunch. It can be used as a whole grain, similar to quinoa or seeds can be ground into a natural gluten free flour. The leaves are also edible and described as having a sweet flavor. Amaranth can be used in soups and stews or cooked like rice and used as a rice substitute in most recipes. There are lots of available recipes just by searching amaranth flour and/or other uses.
